Cheddar Cheese Potatoe Skins Recipe
Got this recipe from a light cook book. But you'd never know it! Husband LOVES them!

Ingredients
  • 2 large baking potatoes
  • 1 1/2 T olive oil
  • 1 1/2 minced fresh garlic
  • pinch of chili powder (optional. I used cayenne pepper instead)
  • pinch salt and freshly ground black pepper
  • 1/3 C shredded light cheddar cheese
  • 1 T grated parmesan cheese
  • 1 T chopped parsley

Directions
  1. Preheat oven to 450 F. Bake potatoes for 1 hr or until tender. (Or pierce skins and microwave on high for 8 - 10 mins). Let cool. Slice in half lengthwise. Carefully remove the pulp, leaving skin intact.
  2. Save pulp for another use. Place skins on baking sheet. Spray both sides with cooking oil.
  3. Combine oil, garlic, chili powder, salt & pepper in small bowl and stir well. Spread or brush the mixture over inner surface of potatoe skins. Sprinkle with cheddar & parmesan.
  4. Bake in center of oven for 15mins or until crisp. Garnish with parsley.
  5. Experiment with different types of cheese for different flavours.
