How to make it

  • Preheat oven to 450 F. Bake potatoes for 1 hr or until tender. (Or pierce skins and microwave on high for 8 - 10 mins). Let cool. Slice in half lengthwise. Carefully remove the pulp, leaving skin intact.
  • Save pulp for another use. Place skins on baking sheet. Spray both sides with cooking oil.
  • Combine oil, garlic, chili powder, salt & pepper in small bowl and stir well. Spread or brush the mixture over inner surface of potatoe skins. Sprinkle with cheddar & parmesan.
  • Bake in center of oven for 15mins or until crisp. Garnish with parsley.
  • Experiment with different types of cheese for different flavours.
