Cheddar Cheese Potatoe Skins

- 2 large baking potatoes shopping list
- 1 1/2 T olive oil shopping list
- 1 1/2 minced fresh garlic shopping list
- pinch of chili powder (optional. I used cayenne pepper instead) shopping list
- pinch salt and freshly ground black pepper shopping list
- 1/3 C shredded light cheddar cheese shopping list
- 1 T grated parmesan cheese shopping list
- 1 T chopped parsley shopping list
How to make it
- Preheat oven to 450 F. Bake potatoes for 1 hr or until tender. (Or pierce skins and microwave on high for 8 - 10 mins). Let cool. Slice in half lengthwise. Carefully remove the pulp, leaving skin intact.
- Save pulp for another use. Place skins on baking sheet. Spray both sides with cooking oil.
- Combine oil, garlic, chili powder, salt & pepper in small bowl and stir well. Spread or brush the mixture over inner surface of potatoe skins. Sprinkle with cheddar & parmesan.
- Bake in center of oven for 15mins or until crisp. Garnish with parsley.
- Experiment with different types of cheese for different flavours.
