Curried Chicken With Mixed Fruit Recipe
The fruit adds a slightly sweet tang, to the sauciness of the curry. A good fall time dinner

Ingredients
  • 1 each apple and pear (Cores removed)
  • 1 med onion
  • 1 tbsp indian curry paste OR 2 tsp Curry Powder (Your choice hot or mild)
  • 1/2 tsp Ground Cumin
  • 1/4 tsp sea salt
  • 1/2 cup Chicken Broth. If you like you can substitute with Coconut Milk
  • 1 cup fresh or frozen cranberries
  • 8 skinless,boneless chicken thighs
  • 1 Green onion (chopped)

Directions
  1. Chop the apple,pear and onion into small pieces
  2. Coat a large frying pan with vegetable oil and set over med-high heat
  3. Add fruit, onion, curry paste/powder, cumin and salt
  4. Reduce heat to med, stir often until onion is soft. (approx. 6 mins)
  5. Stir in the broth and cranberries
  6. Add the chicken and spoon sauce over top
  7. Bring to a boil, cover and reduce heat to med-low
  8. Simmer for approx 15 mins or until chicken is done, making sure to turn over halfway through.
  9. When this is done stir in the green onion
