Sunnies Bow Tie Pasta Primavera Recipe

Ingredients

3/4 pack bow tie pasta cooked according to directions

2-3 Tlbs butter for cooked pasta

1/2 cup shredded parmesan cheese

1 zucchini sliced thin

1 yellow squash sliced thin

About 1 cup cup red onion sliced thin

4 cloves garlic minced

1/2 to 3/4 cup burgundy Italian black olives sliced

1 cup sliced mushrooms

2-3 sliced sun dried tomatoes or 1 cup fresh tomatoes

1/2 bag baby spinach or spinach mix

Just under 1/4 cup olive oil

Salt & pepper to taste

1/4 cup shredded Parmesan cheese for topping

Directions

Heat olive oil on medium+ heat, add zucchini, yellow squash, and onions-salt and pepper-sauté for 2-3 minutes before adding the garlic mushrooms, sun dried tomatoes, and olives-sauté until tender crisp. Before adding veggie mixture to pasta add spinach to slightly wilt. If using fresh tomatoes add when adding spinach. Drain hot cooked pasta, put in bowl or back in pan and add butter, salt & pepper, and parmesan cheese Mix veggie mixture with pasta. Top each serving with a small handful of remaining parmesan cheese. Serve with garlic bread and salad with Italian dressing.
