Sunnies Bow Tie Pasta Primavera

- 3/4 pack bow tie pasta cooked according to directions shopping list
- 2-3 Tlbs butter for cooked pasta shopping list
- 1/2 cup shredded parmesan cheese shopping list
- 1 zucchini sliced thin shopping list
- 1 yellow squash sliced thin shopping list
- About 1 cup cup red onion sliced thin shopping list
- 4 cloves garlic minced shopping list
- 1/2 to 3/4 cup burgundy Italian black olives sliced shopping list
- 1 cup sliced mushrooms shopping list
- 2-3 sliced sun dried tomatoes or 1 cup fresh tomatoes shopping list
- 1/2 bag baby spinach or spinach mix shopping list
- Just under 1/4 cup olive oil shopping list
- salt & pepper to taste shopping list
- 1/4 cup shredded parmesan cheese for topping shopping list
How to make it
- Heat olive oil on medium+ heat, add zucchini, yellow squash, and onions-salt and pepper-sauté for 2-3 minutes before adding the garlic mushrooms, sun dried tomatoes, and olives-sauté until tender crisp. Before adding veggie mixture to pasta add spinach to slightly wilt. If using fresh tomatoes add when adding spinach. Drain hot cooked pasta, put in bowl or back in pan and add butter, salt & pepper, and parmesan cheese Mix veggie mixture with pasta. Top each serving with a small handful of remaining parmesan cheese. Serve with garlic bread and salad with Italian dressing.
