I had some rice & meatballs left over from dinner, & saw how someone here had precooked potatoes

Ingredients
  • Costco meatballs
  • 1.5 C Rice
  • 1.5 C water
  • salt
  • pepper
  • garlic powder
  • butter seasoning
  • 1 potato
  • 4 eggs
  • 2 garlic cloves diced
  • 2 Tbls soy sauce
  • 1 Tbls Worcester sauce
  • 1 Tbls Olive oil
  • 1/2 C grated cheese

Directions
  1. Cook rice in steam cooker with water
  2. add Soy sauce before it is done
  3. Heat up Meatballs while waiting for Rice
  4. Dice up potato & Microwave for 6 minutes to soften
  5. When Meatballs are nice & brown add Worcester Sauce
  6. Cut up Meatballs, add to rice
  7. Add olive oil to pan, add potato pieces
  8. add salt , pepper, butter seasoning & garlic powder, enough to cover all potato's
  9. While potato's are browning stir up the eggs
  10. When potato's are brown, add the rice & meatball mixture.
  11. Mix this up and add to a baking dish.
  12. Pour the egg mixture over
  13. Then sprinkle the cheese over to cover. You can add after baking too
  14. Bake for 15 - 20 minutes

You might want to use double the amount of water if you are cooking raw rice... sounds like a great recipe.


I am sorry, I cheated & used a rice cooker for the rice.
