These are so tasty even if you don't like rhubarb, and they look great when served. No ice cream maker involved!

Ingredients
  • 24 oz rhubarb
  • 3 Tbsp sugar
  • 10 oz double cream (whipping cream)
  • 40 oz (1 1/4 quart) vanilla custard or vanilla pudding
  • Popsicle molds and sticks

Directions
  1. Cut rhubarb into 2 inch pieces.
  2. Place into a saucepan with 1 Tbsp water and the sugar.
  3. Cover and cook for 5 minutes.
  4. Stir and allow to cool.
  5. Whip the cream until it forms soft peaks, then stir in the custard or pudding. (If you use cooked pudding make sure it is cold before adding to the whipped cream.)
  6. Add a spoonful of rhubard to the popsicle mold, then a teaspoon of the custard mixture.
  7. Continue until the mold is full.
  8. Add the sticks and freeze 4 to 5 hours until set.
  9. Serve straight from the freezer!
