Rhubarb and Custard Popsicles

- 24 oz rhubarb shopping list
- 3 Tbsp sugar shopping list
- 10 oz double cream (whipping cream) shopping list
- 40 oz (1 1/4 quart) vanilla custard or vanilla pudding shopping list
- Popsicle molds and sticks shopping list
How to make it
- Cut rhubarb into 2 inch pieces.
- Place into a saucepan with 1 Tbsp water and the sugar.
- Cover and cook for 5 minutes.
- Stir and allow to cool.
- Whip the cream until it forms soft peaks, then stir in the custard or pudding. (If you use cooked pudding make sure it is cold before adding to the whipped cream.)
- Add a spoonful of rhubard to the popsicle mold, then a teaspoon of the custard mixture.
- Continue until the mold is full.
- Add the sticks and freeze 4 to 5 hours until set.
- Serve straight from the freezer!
