A wonderful, easy to prepare quiche that pairs very well with a salad for a brunch menu. Try substituting lanched broccoli or asparagus for the bacon and mushrooms,

Ingredients
  • 1 nine inch frozen pie crust
  • 1/2 pound bacon
  • 2 cups shredded swiss cheese (I like Jarlsberg)
  • 1 3oz. can sliced mushrooms
  • 2 cups milk
  • 4 large eggs
  • 1/4 tsp. nutmeg
  • 1 tsp. salt
  • 1/4 tsp pepper

Directions
  1. Fry bacon until grease is rendered, then crumble when cooled.
  2. Put bacon and shredded cheese into the pie crust, add mushrooms.
  3. Beat eggs and milk together along with the salt, pepper, and nutmeg.
  4. Pour the custard into the crust over the cheese, bacon and mushrooms.
  5. Bake at 375 degrees for 40 mins with a baking pan on rack beneath it to catch any spillage.
  6. Serve immediately for best results, but I also like it as a leftover if there is any leftover.
