Lisas Stuffed Mushrooms

- 24 large mushroom caps (stems removed and set aside) shopping list
- 2 T. olive oil shopping list
- 1/4 cup minced celery shopping list
- 1/2 cup chopped onion shopping list
- mushroom stems, chopped shopping list
- 4 slices turkey bacon, diced shopping list
- 1/4 cup green pepper, chopped shopping list
- 1/2 cup heavy cream shopping list
- 1/2 cup swiss cheese, grated shopping list
- 1 cup cooked rice shopping list
- parmesan cheese shopping list
How to make it
- In a large frypan, heat oil.
- Add celery, onion, mushroom stems, turkey bacon, and green pepper.
- Saute for 5-10 minutes until vegetables are soft.
- Reduce heat to low; add cream and cheese. Stir until cheese melts.
- Add cooked rice; remove from heat.
- Place mushroom caps on greased baking sheet.
- Stuff each cap with 1 tablespoon of filling.
- Sprinkle Parmesan cheese on top.
- Bake in a preheated 375 degree oven for 30 minutes.
