- zucchini relish (8 pints) shopping list
- 10 C. zucchini (minced) shopping list
- 1 C. salt shopping list
- 5 cups onions shopping list
- 1cup celery shopping list
- 3 green peppers (diced) shopping list
- 2 red peppers *Sweet* (diced) shopping list
- 2 tsp. Tumeric shopping list
- 1T dry mustard shopping list
- 3T celery seed shopping list
- 6 c. sugar shopping list
- 5 cups white vinegar shopping list
- 3T cornstarch shopping list
How to make it
- * Prepare Squash: combine with salt & other vegetables. Allow to stand overnight. Drain, rinse and drain. Press bowl down on top of vegetable mixture to force out liquid. In a large pot, combine remaining ingredients; add vegetables and bring to a rolling boil. Reduce heat and boil gently for about 20 minutes. Pour into hot jars.
- * Just remove the seeds from the zucchini, do not peel. Then grind the zucchini.
