Roasted Grape Tomato Sauce Recipe
This is a recipe from Tyler Florence. He used it with shrimp raviolis. I use it any time I have grape tomatoes and when I want a lighter pasta. I use it over spaghetti and toss in some grilled shrimp or chicken. Yum!

Ingredients
  • pint grape tomatoes
  • olive oil
  • salt
  • pepper
  • 2 shallots chopped (I've used 1 onion successfully)
  • basil
  • chives (optional)
  • chervil (optional) (I've never used since I can't find)

Directions
  1. Heat the broiler.
  2. Put the tomatoes onto a baking sheet, drizzle with 2 tablespoons olive oil, and season with salt and pepper.
  3. Broil until the tomatoes burst, about 10 minutes.
  4. In a large skillet over medium-high heat add the remaining 4 tablespoons olive oil.
  5. Put in the shallots and cook them until they are soft, about 5 minutes.
  6. Chop the remaining basil, chives, and chervil and add them to the pan.
  7. Fold the tomatoes into the pan and cook for another 5 minutes.
  8. Mix into cooked pasta of your choice.
