How to make it

  • Thaw halibut if frozen
  • Preheat oven to 450 degrees
  • Shred 1 small zucchini in food processor
  • Melt the butter and pour about 1/2 in the bottom of an ovenproof pan or dish with a very slight dusting of breadcrumbs.
  • Mix the rest of the breadcrumbs with the shredded zucchini
  • Place halibut in pan
  • Top with the breadcrumb mixture
  • season with salt, pepper, and a few sprinkles of Old Bay Seasoning
  • Pour the rest of the butter over the fish
  • Bake in a 450 oven for about 10 minutes. More for thicker pieces.
  • Remove from oven and serve.
  • If desired, you can place under a broiler for a minute to crust up the topping a bit, but be careful not to overcook the fish
