Apricot Loaf Recipe
A wonderful fruit loaf to have by itself, or spread with a little butter.

Ingredients
  • 1/2 cup sugar
  • 1 cup dried apricots or sultanas
  • 15g butter
  • 1 t. baking soda
  • 1 Tblsp. golden syrup
  • 2 small cups flour
  • 1 1/2 t. baking powder

Directions
  1. Put all the ingredients in a basin, except the flour and baking powder.
  2. Add one cup of boiling water and stir well.
  3. When cooled, add flour and baking powder.
  4. Mix, then pour into a lined and greased loaf tin.
  5. Bake for 60 minutes in a moderate oven. (350 - 375F)

Absolutely wonderful - I have made this twice now for friends and they love it (as do I). The recipe is so simple too.

I added a tiny bit of cinammon which was also nice, the second time I made it.
