Not-Quite-So-Dirty Red Rice

- 1/4 pound slab bacon, diced 1/4" shopping list
- 1/3 baked ham, diced 1/4" shopping list
- 1 medium sweet onion, diced 1/4" shopping list
- 1 red bell pepper, diced 1/4" shopping list
- 2 cups uncooked long-grain rice shopping list
- 1/2 tsp. Old Bay Seasoning shopping list
- 1 can (14 oz.) plum tomatoes, chopped (with juices) shopping list
- 4 small/medium tomatoes, diced 1/2" shopping list
- 1 tsp. sugar shopping list
- 4 cups chicken broth shopping list
How to make it
- Place bacon in a pot and cook until fat is rendered and bacon is slightly crisp.
- Remove bacon from pot with a slotted spoon and set aside.
- Discard all but 2 Tbl. of the bacon grease.
- Add onion and pepper to the grease and cook over low heat, stirring, for 10 minutes or until wilted.
- Add the rice and cook stirring for 2 minutes.
- Add the ham, reserved bacon and Old Bay Seasoning.
- Add all tomatoes, sugar and chicken broth.
- Bring to a boil, reduce heat to medium-low, cover and simmer gently for 20 minutes or until most of the liquid has been absorbed and the rice is tender (stir a couple of times while it's cooking).
- Serve hot.
