How to make it

  • Place bacon in a pot and cook until fat is rendered and bacon is slightly crisp.
  • Remove bacon from pot with a slotted spoon and set aside.
  • Discard all but 2 Tbl. of the bacon grease.
  • Add onion and pepper to the grease and cook over low heat, stirring, for 10 minutes or until wilted.
  • Add the rice and cook stirring for 2 minutes.
  • Add the ham, reserved bacon and Old Bay Seasoning.
  • Add all tomatoes, sugar and chicken broth.
  • Bring to a boil, reduce heat to medium-low, cover and simmer gently for 20 minutes or until most of the liquid has been absorbed and the rice is tender (stir a couple of times while it's cooking).
  • Serve hot.
