Ingredients
  • 1/4-1/2 lb ground turkey
  • 1 tablespoon chili powder
  • 2 ears grilled corn, cut from cob
  • 1/2 can black beans, rinsed/drained
  • 1 tomato, seeded/chopped
  • 1/2 jalapeno, seeded/deribbed, minced
  • 1/2 red onion, chopped
  • 1 clove of garlic, minced
  • blue corn chips
  • 1/2 lb reduced-fat cheese
  • 1 cup fat-free sour cream
  • red chili flakes (optional)

Directions
  1. Begin cooking turkey by heating over stove top and combining with chili powder.
  2. Meanwhile, in medium bowl, combine corn, black beans, jalapeno, onion, and garlic.
  3. Mix well to combine. Fold in tomato.
  4. Shred cheese into another bowl. Measure out sour cream and mix well to combine.
  5. Place cheese/cream mixture in microwave on high for 45 seconds. Stir.
  6. Place back n microwave for another 45 seconds or until cheese is thoroughly melted.
  7. Fold in a pinch of chili flakes. Stir to ensure consistency.
  8. Take handful of chips and spread onto four dinner plates
  9. Distribute cheese sauce by drizzling over four plates.
  10. Distribute turkey over four portions.
  11. Top each portion with a few spoonfuls of corn/bean relish.
  12. Serve with sour cream.
