Simants Birthday Cake

- 1 1/4 cp sifted flour shopping list
- 8 large eggs seperated shopping list
- 1 cp sugar shopping list
- 1/4 tsp salt shopping list
- 1/4 cp undiluted frozen orange juice shopping list
- Topping and filling shopping list
- 2 pints whipping cream shopping list
- 1 box French vanilla instant pudding shopping list
- 2 tbs. cocoa powder shopping list
- 1 cp apricot jam shopping list
- @ cps finely chopped pecans shopping list
How to make it
- Beat egg whites and salt til stiff peaks form
- beat egg yolks till light and fluffy
- add flour and sugar alternately with orange juice
- beat till very smooth
- gently fold into beaten egg whites
- pour into tube pan
- run knife through batter to break up any air pockets
- bake in a 350 degree oven for one hour or till top springs back when lightly touched with finger
- remove from oven and cool upside down on a pop bottle til completely cooled
- remove from pan and slice with serated knife to make three layers
- Beat whipping cream and pudding till soft peaks form
- take two cups of mixture and place in seperate bowl
- mix with cocoa powder
- place largest layer on plate and spread cocoa mixture to edges of cake
- place second layer on top of first
- spread second layer with apricot jam
- place third layer on top of second.
- Frost entire cake with pudding mixture
- pat chopped pecans around sides
- chill in refrigerator for at least one hour before serving.
- Makes 12 generous servings.
- It really isn't as hard as it sounds and it is so delicious it is worth the time and effort.
