How to make it

  • Gently simmer berries and lemon juice for approx 30 mins until very soft.
  • Remove from the heat.
  • Add the sugar and stir until dissolved.
  • Add the butter.
  • Boil rapidly for 4-5 mins.
  • Add the pectin.
  • Remove the scum and cool slightly.
  • Sieve to remove the pips.
  • If you want seeded jam, you can add some of the pips back in at this point.
  • Pot in warms jars (to prevent cracking).
