Ingredients
  • 1 pound of Okra
  • 1/2 cup of Corn Meal
  • 1 tsp of salt
  • 1 tsp of pepper
  • 1 tsp of Garlic powder
  • 1/2 cup of Olive Oil
  • 2 Red Potatos
  • 1/2 Cup of Flour
  • Optional: 1/2 cup of Tomato pieces, 1/2 cup of Onion (purple or yellow), 1/2 cup of Whole Kernal Corn, 1/2 cup of Green peppers

Directions
  1. Wash okra off.
  2. Cut both ends of Okra off and discard.
  3. Cut okra into 1/2 inch wheels and place in bowl.
  4. In the same bowl after you finish cutting the okra add 1/4 cup of Olive Oil, Corn Meal, Salt, Pepper, Garlic Powder, and Flour.
  5. Take and cut your red potatos in half and cut them jullian style and then turn and chop the strips.
  6. Put into the bowl.
  7. Put lid on bowl and shake well to coat everything.
  8. Pour 1/4 cup of olive oil in to a skillet and pour everything in bowl into the skillet.
  9. Cook on medium high heat like you would fried potatos for about 15 minutes.

Yummy! I Love fried Okra! I went to elemetary school in Davis Oklahoma. And that is where I was introduced to fried okra. Thanks:) I haven;t had okra in years:)
