How to make it

  • Drizzle oil into a skillet over medium heat.
  • Tear up corn tortillas into 1 inch pieces or smaller.
  • Fry them till they are soft (I like mine toasty so I get them a little brown on the edges).
  • In a separate bowl, scramble the eggs and egg whites together.
  • Add salt and pepper to taste - usually you just need a little.
  • Pour the eggs into the skillet and stir them all up together.
  • Cook until eggs are ready (again, I like mine a little toasty, so I cook a little longer)
