Swordfish with olives and caramelized onions

- 4 swordfish steaks (about 8 oz. each) shopping list
- 2 Tbl. extra virgin olive oil shopping list
- 2 large red onions, cut in half and thinly sliced shopping list
- 1 Tbl. orange zest shopping list
- 2 Tbl. ripe (black) olives, coarsely chopped shopping list
- 6 whole ripe olives, sliced in half shopping list
- 1 tsp. oregano shopping list
- 1/2 cup fresh squeezed orange juice shopping list
- salt and pepper to taste shopping list
How to make it
- Toss the onions and orange zest in the oil.
- Place the onion mixture in a baking dish and bake at 400 degrees for 25 minutes.
- Stir in all the olives and oregano and transfer to a bowl, set aside.
- Arrange the swordfish steaks in a baking dish,
- Pour the orange juice over the steaks and season with salt and pepper.
- Spoon the onion mixure over the steaks.
- Bake at 400 degrees for 15 - 20 minutes.
- Serve.
