Swordfish With Olives And Caramelized Onions Recipe
Swordfish with the flavors of orange, caramelized onions and olives. Not much more to say except, it's a beautiful "special company is coming" dish.

Ingredients
  • 4 swordfish steaks (about 8 oz. each)
  • 2 Tbl. extra virgin olive oil
  • 2 large red onions, cut in half and thinly sliced
  • 1 Tbl. orange zest
  • 2 Tbl. ripe (black) olives, coarsely chopped
  • 6 whole ripe olives, sliced in half
  • 1 tsp. oregano
  • 1/2 cup fresh squeezed orange juice
  • Salt and pepper to taste

Directions
  1. Toss the onions and orange zest in the oil.
  2. Place the onion mixture in a baking dish and bake at 400 degrees for 25 minutes.
  3. Stir in all the olives and oregano and transfer to a bowl, set aside.
  4. Arrange the swordfish steaks in a baking dish,
  5. Pour the orange juice over the steaks and season with salt and pepper.
  6. Spoon the onion mixure over the steaks.
  7. Bake at 400 degrees for 15 - 20 minutes.
  8. Serve.
