A very simple and easy pasta dish using clams or you have the option of using any kind of shellfish.

Ingredients
  • 450g flat pasta or angel hair pasta
  • 3 tbs olive oil
  • 1 tsp garlic, minced
  • 1 big onion, minced
  • 4 tbs fresh parsley, chopped
  • 4 pounds clams in shell (or 1 large package of shelled clams)
  • 1/2 cup white wine
  • 1 cup all-purpose cream
  • 1 cup chicken broth
  • 1 tsp dried basil
  • 1/2 cup freshly-grated parmesan cheese
  • dash of pepper and salt

Directions
  1. Wash clams and put in basin with water. Pour salt over it. When partly open, they would have spat the excess sand in their bellies. Wash and boil for 5 minutes. Let cool, take out from shells and set aside. An easier way would be to get shelled clams off the freezer section of the supermarket.
  2. Over medium heat, saute garlic, onions and parsley in olive oil. Add clams, wine and chicken broth. Simmer. Add cream, basil, salt and pepper to taste.
  3. Cook pasta according to package directions. Top with prepared sauce and parmesan cheese.
