Pasta Vongole Clam Pasta

- 450g flat pasta or angel hair pasta shopping list
- 3 tbs olive oil shopping list
- 1 tsp garlic, minced shopping list
- 1 big onion, minced shopping list
- 4 tbs fresh parsley, chopped shopping list
- 4 pounds clams in shell (or 1 large package of shelled clams) shopping list
- 1/2 cup white wine shopping list
- 1 cup all-purpose cream shopping list
- 1 cup chicken broth shopping list
- 1 tsp dried basil shopping list
- 1/2 cup freshly-grated parmesan cheese shopping list
- dash of pepper and salt shopping list
How to make it
- Wash clams and put in basin with water. Pour salt over it. When partly open, they would have spat the excess sand in their bellies. Wash and boil for 5 minutes. Let cool, take out from shells and set aside. An easier way would be to get shelled clams off the freezer section of the supermarket.
- Over medium heat, saute garlic, onions and parsley in olive oil. Add clams, wine and chicken broth. Simmer. Add cream, basil, salt and pepper to taste.
- Cook pasta according to package directions. Top with prepared sauce and parmesan cheese.
