New York Cheese Cake

- 2 1/2 cups graham cracker crumbs shopping list
- 1/2 cup (1 stick) butter, melted shopping list
- 1 cup sugar divided shopping list
- 2 pound cream cheese shopping list
- 2 large eggs, lightly beaten shopping list
- 1 tsp vanilla extract shopping list
- 2 tbs cornstarch shopping list
- 1 cup sour cream shopping list
How to make it
- Preheat oven to 450F.
- In a bowl, place graham cracker crumbs, butter and 2 tbs sugar; blend well. Reserve 2 tbs for garnish. Press remaining mixture onto bottom and sides of greased 9-in springform pan. Chill in freezer while preparing filling.
- In mixer bowl, beat cream cheese and remaining sugar until smooth and light. Beat eggs, vanilla, and cornstarch, just until blended. Stir in sour cream.
- Pour mixture into springform pan and bake for 10 minutes. Reduce temperature to 200F and bake 45 minutes.
- Turn off oven; allow to cool with the door slightly opened for 3 hours. Remove sides from pan; sprinkle with reserve crumb mixture and chill.
- Makes 8 servings.
