Fantastic salad everyone loves. Homemade dressing adds a nice touch. Great by itself.

Ingredients
  • 4 chicken breast - cooked and diced into 1/2 inch cubes
  • 1 cup diced pecans
  • 1 cup dried cranberries
  • 8 slices of cooked bacon crumbled...(can be turkey bacon)
  • 1 small contanier of feta cheese
  • (can subsitute 1 cup shreadded mozzerella cheese
  • Two large bags of spring mix salad
  • DRESSING
  • 1/2 red onion - diced
  • 1/2 red wine vinegar
  • 2 cups canola oil
  • 2 cups sugar
  • 2 t salt
  • 4 t dried mustard

Directions
  1. Prepare salad ingredients large bowl.
  2. For the dressing, combine in blender until smooth.
  3. Pour dressing onto salad and mix well.
  4. This salad it to taste. If you want more chicken, add more etc.
  5. If you love feta cheese, add more..you get it now!
  6. Such a great tasting dressing! It's fancy....
