Tiramisu Parfait Recipe
This recipe provides a wonderful twist to the original, Italian favorite.

Ingredients
  • 1 angel food cake, sugar free
  • 1 (8 oz package cream cheese, fat-free
  • 3 1/2 tsp decaffeinated coffee powder, instant
  • 2 tsp cocoa powder
  • 1/2 cup mascarpone cheese
  • 2 tbsp brown sugar, dark
  • 1 cup SPLENDA Granular
  • 1 1/2 cups hot water
  • 1/2 tsp vanilla extract

Directions
  1. First, dissolve the instant coffee in hot water, then place in the refrigerator to chill. Next, cut angel food cake into 1 inch cubes and place aside. In a mixing bowl, combine cream cheese and mascarpone, mix until smooth. Add 2 tablespoons of coffee, dark brown sugar, SPLENDA and vanilla. Mix well and place aside. Pour cold coffee into shallow 9X13 inch pan. Immediately dip half of the cake pieces into coffee, and place into a medium sized, glass serving bowl. Spread half of cheese mixture on top and drizzle with 1 tsp of cocoa powder. Repeat the same procedure with the remaining angel food cake, cheese mixture, and cocoa powder. Finally, cover and chill for three hours (or overnight) prior to serving.
