To respond to one of my cooking buddies, here's my simple recipe of olive oil dip - great for crusty breads and my favorite focaccia.

Ingredients
  • 1 cup Extra-virgin Olive oil
  • 1 tbs fresh Basil, minced
  • 1 tbs fresh Italian Parsley, minced
  • 1 tbs fresh Garlic, minced
  • 1 tsp Thyme
  • 1 tsp Black Pepper
  • 1/2 tsp Fresh Rosemary, minced
  • 1/2 tsp Kosher Salt
  • 2 tbs Apple Cider Vinegar (or use balsamic vinegar or lemon juice)
  • 2 tbs Red Wine (optional)
  • 1/4 cup Parmigiano-Reggiano cheese

Directions
  1. Two ways to create this dip: Either mix together all ingredients in oil except parmigiano cheese. Let stand for at least 20 minutes. Add cheese by stirring in oil mixture before serving,
  2. Another way is to blend all herbs and spices in a blender adding a little oil until you create a paste. In a separate shallow dish, put around 5 tbs of olive oil and 1 tsp of vinegar. Add 2 tsp of mixed herbs and stir in parmigiano cheese.

Have you ever a bowl with thin sliced onions,cucumber,garlic,salt pepper,vineger
as a salad/type thing weird but good


Hi Frodo! Oh yes - I have something similar but simpler with just slices of cucumber , white vinegar, dash of salt, pepper & sugar. Very very good with any tomato-based meat dish I make. It's a favorite!
