Sunnies Tex Mex Lasagna Recipe

Ingredients

Grease Glass 10" x 14½" Lasagna Pan

1 pack Corn tortillas

-----------

First Layer

1 can refried beans

1 bag Quorn Fake Chicken pieces

½ bag taco season

About ½-3/4 cup water

Second Layer

1 container Ricotta Cheese

1 container cottage cheese

1 cup mexi-cheese

¾ cup salsa

Season with chili powder, cumin, salt and pepper

Third Layer

1 can tomatoes with mexi season

1 can green chilies

2 chopped tomatoes

2 chopped garlic cloves

¼ onion

½ cup chopped cilantro

Season with chili powder, cumin, salt and pepper

Combine the above in a blender and blend until liquid.

Add to pot that has been on the stove sautéing:

¾ chopped fine onion

1 chopped fine green pepper

½ chopped fine jalapeño

2 minced garlic cloves

Season with chili powder, cumin, salt and pepper

Add 1 can drained and rinsed black beans and 1 can drained and rinsed corn.

Add tomato mixture and simmer until watery liquid is almost gone.

I moistened the tortillas in the watery liquid and put 6 in the lasagna pan then started layering.

Only one layer of the bean/chicken mixture.

Final layer is tortillas topped with 1-2 cups more mexi cheese and 1 can sliced olives.

Cover with foil and Bake in 350 degree oven for 25-35 minutes.

Remove foil and add 1 cup or so crushed tortilla chips, bake for another 5 min.
