How to make it

  • Peel and dice potatoes
  • add gradually to blender or processor
  • add one onion and blend thoroughly
  • transfer to a mixing bowl
  • add eggs, salt and pepper
  • add about 1 cup of flour at a time *
  • * add only enough flour so that the dough doesn't fall off the spoon
  • Stir well and pour onto a dinner plate
  • Bring 3 quarts of water to a boil with salt
  • hold plate in one hand and with the other hand, use a table knife to slide off little pieces of dough into the boiling water. I like pieces about 1 inch by 1/4 inch but you can make them any size you want.
  • They are done when the water comes back to the boil and the dumplings are floating on top (about 3 to 4 minutes)
  • Put in colander and run cold water over.
  • Place in Dutch oven that can go in the oven
  • Fry cabbage and diced onion in LOTS of butter for 10 to 15 minutes
  • Pour over the dumplings and cover
  • Bake for 1/2 hour
