Holushki By Baba Recipe
This is another of my mother-in-law's famous recipes. They are tiny little potato dumplings fried with cabbage & onion. OMG! So good. As I've said before (holubki) she didn't measure so just use your taste as a guide.

Ingredients
  • 5 to 6 potatoes
  • one onion
  • 1 to 2 eggs
  • salt and lots of pepper
  • 3 c. flour (approximate)
  • Cabbage - 4 plus cups or to taste
  • Onion - 2 plus cups or to taste
  • Butter for frying cabbage and onion (lots)

Directions
  1. Peel and dice potatoes
  2. add gradually to blender or processor
  3. add one onion and blend thoroughly
  4. transfer to a mixing bowl
  5. add eggs, salt and pepper
  6. add about 1 cup of flour at a time *
  7. * add only enough flour so that the dough doesn't fall off the spoon
  8. Stir well and pour onto a dinner plate
  9. Bring 3 quarts of water to a boil with salt
  10. hold plate in one hand and with the other hand, use a table knife to slide off little pieces of dough into the boiling water. I like pieces about 1 inch by 1/4 inch but you can make them any size you want.
  11. They are done when the water comes back to the boil and the dumplings are floating on top (about 3 to 4 minutes)
  12. Put in colander and run cold water over.
  13. Place in Dutch oven that can go in the oven
  14. Fry cabbage and diced onion in LOTS of butter for 10 to 15 minutes
  15. Pour over the dumplings and cover
  16. Bake for 1/2 hour
