Zucchini Herb Casserole

- 1/3c uncooked long grain white rice shopping list
- 2/3c water shopping list
- 2Tbs veg. oil shopping list
- 11/2lbs zucchini ,cubed shopping list
- 1c sliced green onions shopping list
- 2cloves garlic,minced,11/2tsp garlic salt shopping list
- 3/4tsp basil shopping list
- 1/2tsp sweet paprika shopping list
- 3/4tsp dried oregano shopping list
- 11/2c seeded,chopped tomatoes shopping list
- 2c shreaded sharp cheddar cheese,divided shopping list
How to make it
- Combine the rice and water in a saucepanand bring to a boil. Reduce heat to low,cover,simmer20 mins,until rice is tender.
- Preheat oven to 350.. Lightly greas shallow 11/2qt. casserole dish.
- Heat oil in skillet over med heat and cook zucchini,green onions and garlic 5 mins or till tender. Season with garlic salt,basil,paprika and oregano. Mix in cooked rice,tomatoes,and 1c cheese. Continue to cook and stir till heated through. Transfer to the prepared casserole dish. Top with remaining cheese.
- Bake,uncovered 20 mins,or till cheese is melted and bubbly.
