How to make it

  • In a large saucepan, warm the butter over medium heat until melted. Add the onion and saute until softened, about 5 minutes. Add the mushrooms and saute until softened, about 5 minutes.
  • Stir in the tomato paste, chicken broth and 1 cup water. Bring to a boil over medium high heat.
  • Meanwhile, cut the chicken on the diagonal into 1/2 inch wide strips. Add to the pan with the noodles.
  • Reduce the heat to medium-low, cover, and simmer for about 8 minutes, stirring occasionally, until the chicken is cooked through and the noodles are tender. Stir in the parsley. Salt and pepper to taste.
