Angelgirls Potato Salad

- 6-8 medium red potatoes-peeled or unpeeled shopping list
- 2 eggs shopping list
- 1/2 cup chopped celery shopping list
- 1/2 cup finely chopped onion shopping list
- 1/2 cup chopped sweet pickles shopping list
- 2/3 cup mayonnaise-or to taste shopping list
- 1 tablespoon yellow mustard-or to taste shopping list
- 1 teaspoon salt shopping list
- 1 teaspoon black pepper shopping list
- 1/2 teaspoon garlic powder shopping list
- 1 tablespoon paprika shopping list
How to make it
- Wash potatoes and cut into bite size peices.
- Place in large dutch oven and cover with cold water.
- Carefully place eggs on top of potatoes. Make sure water covers them. Bring to a boil then simmer for 15 minutes or until potatoes are fork tender.
- Remove eggs,drain potatoes and rinse with cold water until cool enough to handle.
- Peel eggs and chop finely. Set aside.
- Transfer potatoes to a large mixing bowl
- Add eggs,celery,onion,pickles,salt,pepper,and garlic powder. Toss gently to combine.
- Mix mustard and mayonaise together and pour over potato mixture. Toss gently to coat.
- Sprinkle paprika over the top. Do not stir.
- Cover and refrigerate at least one hour before serving.
