How to make it

  • Wash and trim cauliflower, do not break apart. In a large cooking pot, cook cauliflower in boiling salted water until tender, about 15 mins. Drain and keep warm.
  • Melt butter in a 2 qt saucepan, stir in flour and cook 2 mins. Add half-and-half; cook and stir until mixture boils and thickens. Remove from heat; add cheese and mustard, stirring until cheese melts.
  • To serve, spoon cheese sauce over cooked cauliflower heads.
