Zippy Tofurkey Sandwich Recipe
A great vegetarian sandwich. Lots of zip and protein.

Ingredients
  • 2 Slices Marble Rye Bread (or Pumpernickle)
  • 3-4 Slices Tofurkey (no-meat lunchmeat) Peppered Flavor
  • 2-4 Thin Slices Sharp Cheddar Cheese and/or Pepper Jack
  • 6-10 Black Olives (sliced or halved long ways)
  • 3 or 4 Slightly Chopped Artichoke Hearts
  • 2-3 Tbsp Nayonaise Dijon Style (Soy based mayo by Nasoya)

Directions
  1. Lay out the bread and spread the Nayonaise on both slices of bread. If you use the good bread that isn't symmetrical make sure the shape of each piece is mirrored. (Yes, the first time I made this I wasn't thinking and I did NOT do this, lol.)
  2. Place the artichoke hearts and black olives on one slice of bread and the Tofurkey and cheese on the other piece of bread. (It stays together better if you put it together like that.)
  3. Once together cut in half if desired, depending on the size of your bread.
