Lentil Soup With Knockwurst Recipe
This is an incredibly easy soup to prepare but sure is loaded in taste. Very comforting on a cold or rainy night. Great taste in this delightful dish. Enjoy

Ingredients
  • 1 pound lentils rinsed and drained
  • 2 medium white onions chopped
  • 2 medium carrots chopped
  • 1 medium red bell pepper chopped
  • 2 cloves garlic minced
  • 1 small dried hot red chili crushed
  • 1 teaspoon dry rosemary
  • 1/4 teaspoon freshly ground black pepper
  • 2 cans beef broth
  • 3 cups water
  • 8 ounce can tomato sauce
  • 1 pound knockwurst
  • 2 tablespoons red wine vinegar

Directions
  1. Combine all ingredients except tomato sauce, meat and vinegar in a large crock-pot.
  2. Cover and cook at low setting for 8 hours.
  3. Remove 2 cups of the mixture and whirl in blender until pureed then return to crock-pot.
  4. Increase heat setting to him then add tomato sauce and meat then cover and heat 30 minutes until heated through.
  5. Stir in vinegar and serve while hot.
