Garlic Roasted Halibut Recipe

Ingredients
  • 4 halibut steaks
  • 1-1/2 pounds small new potatoes
  • 12 cloves garlic with skins
  • 1 medium green bell pepper seeded and cut into strips
  • 1 medium red bell pepper seeded and cut into strips
  • 1 medium red onion peeled and cut into wedges
  • 1/2 teaspoon sea salt
  • 1 teaspoon freshly ground black pepper
  • Garlic rosemary butter:
  • 3 tablespoons olive oil
  • 2 tablespoons melted butter
  • 1 tablespoon chopped fresh rosemary
  • 4 garlic cloves pressed

Directions
  1. To make garlic rosemary butter whisk all ingredients together until well combined.
  2. Place vegetables on a baking sheet then season with salt and pepper and drizzle with half of the seasoned butter.
  3. Toss to coat well then bake on top shelf of oven at 450 for 20 minutes then stir with spatula and move to bottom shelf of oven.
  4. Season halibut with sea salt and pepper then brush with remaining seasoned butter.
  5. Place on baking sheet and place on upper shelf of oven and cook 10 minutes per side.
