Creamy Onion And Almond Casserole Recipe
This is so good. I got this recipe from a neighbor several years ago and it is now a mainstay especiall when Vidalia onions are plentiful. This goes good with everything, but we like it serve with steak or pork chops. Enjoy

Ingredients
  • 3 large sweet onions cut into wedges
  • 2 tablespoons butter
  • 2 tablespoons flour
  • 1 cup chicken broth
  • 5 ounce can evaporated milk
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 cup slivered almonds
  • 1 cup soft bread crumbs
  • 2 tablespoons unsalted butter melted
  • 1/2 cup pepper jack cheese shredded

Directions
  1. Cook onions in boiling water to cover in large saucepan over low heat for 5 minutes then add flour and stir until smooth.
  2. Cook 1 minute longer stirring constantly then gradually add broth and evaporated milk and cook over medium heating stirring until mixture thickens.
  3. Stir in salt and pepper then add almonds and stir gently to combine.
  4. Pour into buttered baking dish and sprinkle with bread crumbs and drizzle with butter.
  5. Bake uncovered at 375 for 25 minutes then sprinkle evenly with cheddar cheese and bake uncovered 7 minutes longer.
