How to make it

  • Season chicken with a little cajun seasoning
  • In a 12" skillet(with a lid), lightly brown chicken on both sides in butter & olive oil on medium heat, about 5 minutes each side
  • Remove from pan & add onions & saute lightly.
  • Add chicken broth & wine, bring to a boil
  • Add soup & stir with a wisk or fork until no lumps remain.
  • Salt, pepper & cajun seasoning to taste
  • Place chicken back in skillet & spoon sauce over chicken
  • Cover & simmer on medium low about 20 minutes
  • Serve over rice
