Ingredients
  • 2 1/4 cups toasted hazelnuts
  • 4 egg whites
  • 1 1/4 cups granulated sugar
  • Pinch salt
  • 1 tsp pure vanilla extract
  • 48 whole hazelnuts
  • 4 to 8oz bittersweet chocolate, melted

Directions
  1. Preheat oven to 350ºF
  2. Line baking sheets with parchment paper.
  3. Chop hazelnuts in food processor using on/off switch just until coarsely chopped.
  4. Set aside.
  5. Place egg whites, sugar and salt in a large heatproof bowl.
  6. Put bowl over a pot of simmering water.
  7. Cook, whisking occasionally, for about 10 minutes or until mixture is hot and opaque.
  8. Remove from heat.
  9. Beat on high speed until stiff and glossy, 5 to 7 minutes.
  10. Stir in vanilla and the chopped hazelnuts.
  11. Drop batter by small spoonfuls onto prepared baking sheets.
  12. Place a whole hazelnut on top of each.
  13. Bake in center of preheated oven for 12 to 15 minutes or until very light brown.
  14. Turn oven off and leave meringues in oven to dry out for 15 minutes.
  15. Remove to wire rack and cool completely.
  16. For finishing, cookies can be finished in 2 ways.
  17. You can drizzle melted chocolate on top of cookies
  18. Let chocolate set before packing.
