These warm delectable peppers will sell themselves when you see them come out of the oven! slightly browned and filled with a satisfying mixture, great for a starter or dinner...bon appetit!

Ingredients
  • 8 green bell peppers lid cut off and insides scraped out (keep lids)
  • 2 cups of brown rice
  • 1 jar spaghetti sauce, garlic and onion flavour
  • 1/2 cup light sour cream
  • 1 red pepper
  • 1 medium onion
  • 4 button mushrooms diced very small
  • 1/2 package frozen spinach (defrosted and chopped up small)
  • pepper
  • salt
  • GARLIC lots of it
  • Cayenne pepper to taste
  • 1 tsp paprika
  • 1 tsp thyme

Directions
  1. Cook rice according to package directions ( I use brown rice because it is healthier)
  2. add sauce, sour cream, garlic, cayenne, mushrooms, spinach, red pepper,paprika,thyme, salt and pepper to rice
  3. stir and simmer for 5 minutes
  4. preheat oven to 250
  5. stuff each pepper with mixture and sprinkle with chedder cheese, replace lid
  6. cook for 1 hour
  7. should be soft when poked with a fork
  8. serve warm with sour cream!
