Greek Garden Salad

Delicious salad that's a combination of Italian and Syrian. Great in a pita pocket. From Taste of Home Cooking for 2.
Ingredients
- 3c torn romaine shopping list
- 1 plum tomato,sliced shopping list
- 1/2c julienned sweet red pepper shopping list
- 1/2c sliced,seeded,peeled cucumber shopping list
- 1/3c chickpeas shopping list
- 1/4c sliced fennel bulb shopping list
- 1/4c chopped celery shopping list
- 6 pitted ripe or Greek olives shopping list
- 1 green onion,thinly sliced shopping list
- Dressing: shopping list
- 2Tbs lemon juice shopping list
- 1Tbs olive oil shopping list
- 1 garlic clove,minced shopping list
- 1tsp fresh minced cilantro shopping list
- 1 tsp water shopping list
- 1/2 tsp minced fresh mint or 1/8 tsp dried mint shopping list
- 1/2 tsp minced,fresh oregano or 1/8tsp dried oregano shopping list
- 1/2tsp grated lemon peel shopping list
- dash of salt and pepper shopping list
- 1Tbs crumbled feta cheese shopping list
How to make it
- In a small serving bowl,combine first 9 ingredients.
- For dressing,in a jar with tight fitting lid,combine lemon juice,oil,garlic,cilantro,water,mint,oregano,lemon peel,salt and pepper;shake well. Drizzle over salad;toss to coat.. Sprinkle with cheese.
