Stuffed Acorn Squashes

- 3 acorn squashes (about 1-1/2 lbs. each) shopping list
- 1 cup water shopping list
- 1 to 1-1/2 diced cooked ham or pork shopping list
- 1 cup finely shredded cheddar cheese shopping list
- 1/2 cup thinly sliced celery shopping list
- 1/4 cup margarine, melted shopping list
- 1 Tbs. mined onion shopping list
- 1 TBS. brown onion shopping list
- 1 tsp salt shopping list
- 1 tsp dry mustard shopping list
- 1/4 tsp pepper1/2 cup fine dry bread crumbs mixed with 1 Tbs. melted margarine shopping list
How to make it
- Halve squashes lengthwise, remove seeds and membranes.
- Placed cut sides down in shallow 15/10 inch pan. Add water.
- Bake in preheated 350 degree oven until tender, about 1 hour.
- Drain water from pan.
- Carefully scoop pulp from squashes, leaving sturdy shells; reserve shells.
- Mash pulp and mix well with pork, cheese, celery, margarine, onion, brown sugar, salt, mustard and pepper.
- Fill shells.
- Sprinkle with crumb topping and bake in same pan at 350 over until hot and crumbs are lightly browned; about 30 minutes.
