Stuffed Acorn Squashes Recipe
This is a little differnt from the typical stuffed squash with sausage. My kids loved it when they were young!

Ingredients
  • 3 acorn squashes (about 1-1/2 lbs. each)
  • 1 cup water
  • 1 to 1-1/2 diced cooked ham or pork
  • 1 cup finely shredded cheddar cheese
  • 1/2 cup thinly sliced celery
  • 1/4 cup margarine, melted
  • 1 Tbs. mined onion
  • 1 TBS. brown onion
  • 1 tsp salt
  • 1 tsp dry mustard
  • 1/4 tsp pepper1/2 cup fine dry bread crumbs mixed with 1 Tbs. melted margarine

Directions
  1. Halve squashes lengthwise, remove seeds and membranes.
  2. Placed cut sides down in shallow 15/10 inch pan. Add water.
  3. Bake in preheated 350 degree oven until tender, about 1 hour.
  4. Drain water from pan.
  5. Carefully scoop pulp from squashes, leaving sturdy shells; reserve shells.
  6. Mash pulp and mix well with pork, cheese, celery, margarine, onion, brown sugar, salt, mustard and pepper.
  7. Fill shells.
  8. Sprinkle with crumb topping and bake in same pan at 350 over until hot and crumbs are lightly browned; about 30 minutes.
