Winter Salad

This salad is so delicious, you almost can't stop eating it! It is also beautiful when served in a clear glass bowl. A great accompaniment to any entree. Beautiful addition to a holiday buffet. I call it Winter Salad because it doesn't require a lot of fresh vegetables, but it can be made anytime of year!
Ingredients
- SALAD
- 1 head romaine lettuce shopping list
- ½ c. dried cranberries (craisins) shopping list
- 1 pear, cut up shopping list
- 1 apple, cut up shopping list
- 1 c. slivered almonds shopping list
- 1 c. shredded swiss cheese shopping list
- POPPY SEED DRESSING
- ½ c. sugar shopping list
- 1/3 c. lemon juice shopping list
- 1 tsp. Dijon mustard shopping list
- Diced onion, to taste shopping list
- 2/3 c. light olive oil shopping list
- 1 T. poppy seed shopping list
How to make it
- Combine salad ingredients. Combine dressing ingredients and toss with salad just before serving.
- Note: Olive oil will partially solidify if chilled, so if you make the dressing ahead of time and refridgerate, make sure to take it out a half hour or so before serving.
- Note: I often use two apples if I can't find a good pear.
