Ingredients
  • 1 pound of uncooked shrimp (medium-large size, deveined, tail on or off)
  • 1 c. of you favorite brand store bought Italian salad dressing
  • 1-3 tsp. chili pepper flakes
  • SALSA:
  • 1 firm-ripe small mango
  • 1/3 cucumber (English or regular, seeds removed)
  • 2 Tbsp. finely chopped cipollini onion (or other small, sweet onion)
  • 2 Tbsp. fresh Valencia orange juice
  • 1 tsp. fresh lime juice
  • 1/2 tsp. extra-virgin olive oil

Directions
  1. Devein (if necessary) and rinse shrimp. Place shrimp in lidded container or ziplock bag, add Italian dressing and chili flakes. Marinate for at least 1 hour. While shrimp marinates, prepare the salsa.
  2. Peel mango and cut flesh from pit. Cut mango into 1/4-inch dice and transfer to a small bowl. Halve and seed cucumber. Cut cucumber into 1/4-inch dice and add to mango. Stir in remaining ingredients until combined well and season with salt and pepper.
