Grilled Shrimp With Mango Cucumber Salsa

- 1 pound of uncooked shrimp (medium-large size, deveined, tail on or off) shopping list
- 1 c. of you favorite brand store bought Italian salad dressing shopping list
- 1-3 tsp. chili pepper flakes shopping list
- SALSA: shopping list
- 1 firm-ripe small mango shopping list
- 1/3 cucumber (English or regular, seeds removed) shopping list
- 2 Tbsp. finely chopped cipollini onion (or other small, sweet onion) shopping list
- 2 Tbsp. fresh Valencia orange juice shopping list
- 1 tsp. fresh lime juice shopping list
- 1/2 tsp. extra-virgin olive oil shopping list
How to make it
- Devein (if necessary) and rinse shrimp. Place shrimp in lidded container or ziplock bag, add Italian dressing and chili flakes. Marinate for at least 1 hour. While shrimp marinates, prepare the salsa.
- Peel mango and cut flesh from pit. Cut mango into 1/4-inch dice and transfer to a small bowl. Halve and seed cucumber. Cut cucumber into 1/4-inch dice and add to mango. Stir in remaining ingredients until combined well and season with salt and pepper.
