Gingered Pumpkin Soup

Wonderful on a cool day....
Ingredients
- 2 tablespoons olive oil shopping list
- 2 tablespoons butter shopping list
- 1 medium onion, chopped shopping list
- 1 medium granny smith apple, chopped shopping list
- 1 can pure pumpkin shopping list
- 2 cans chicken broth shopping list
- 1 teaspoon ginger, or 2 teaspoons fresh grated ginger shopping list
- 1 cup heavy cream shopping list
How to make it
- sautee onions and apple in butter and onion
- process this mixture in food processor until smooth
- return to pan, and stir in pumpkin and chicken broth
- after it heats through, stir in heavy cream, and allow to heat throughout.
