Ingredients
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 1 medium onion, chopped
  • 1 medium granny smith apple, chopped
  • 1 can pure pumpkin
  • 2 cans chicken broth
  • 1 teaspoon ginger, or 2 teaspoons fresh grated ginger
  • 1 cup heavy cream

Directions
  1. sautee onions and apple in butter and onion
  2. process this mixture in food processor until smooth
  3. return to pan, and stir in pumpkin and chicken broth
  4. after it heats through, stir in heavy cream, and allow to heat throughout.
