Whole Roasted Onions With Thyme Recipe

Whole Roasted Onions With Thyme Recipe
A recipe from either "Gourmet" or "Bon Appetit" circa 1990. The original recipe called for a pinch of sugar per onion, but I never had sugar in the house so have always made them without.

  • 4 teaspoons butter
  • thyme (to taste)
  • salt (to taste)
  • pepper (to taste)

Directions
  1. Pre-heat oven to 400°F.
  2. Peel onions.

  4. Place each onion on a 12" square of foil.
  5. Dot each onion with 1 tsp of butter.
  6. Sprinkle each onion with thyme, salt and pepper to taste.
  7. Crumple foil over each onion, leaving a small opening at the top to vent.
  8. Place the four packets on a baking sheet.
  9. Bake 40-45 minutes until soft.
  10. Carefully open packets and serve.

Do you think the butter is necessary? I'm trying to find something that calls for little, if any, fat...

And do the onions carmelize or do they just get soft and mushy? Either way is okay, just wondering what to look for!

Thanks!
