Buttermilk Oat Bran Muffins Recipe
This recipe from epicurious.com. Great base recipe for some very healthy muffins that I (and you!) can play around with to fit your tastes/needs. (123 calories give or take a few per muffin). Enjoy!

Ingredients
  • 1 cup bran (crush up if using bran cereal)
  • 2/3 cup white flour
  • 2/3 cup whole wheat flour
  • 1 1/4 teaspoon baking soda
  • 1/8 teaspoon salt
  • 1 1/4 cup buttermilk
  • 1/2 cup sugar (raw preferably)
  • 1/4 cup applesauce
  • 1 egg
  • 1 1/2 tablespoon canola oil
  • 1 teaspoon vanilla
  • Optional (can do any "add on's" you want here):
  • 1/2 cup dried cherries
  • 1/2 cup chopped walnuts

Directions
  1. Preheat oven to 350
  2. Mix flours, baking soda, salt and bran together
  3. Mix buttermilk, sugar, applesauce, egg, vanilla, canola oil and vanilla
  4. Pour the wet mixture into the dry ingredients, mix just so moist - do not over mix -
  5. Fold in cherries and walnuts
  6. Spray a 12-muffin tin
  7. Bake for 18-20 minutes
  8. Try not to eat all at once!
