Also from epicurious.com. Another basic muffin recipe that you can play around with to fit your taste/needs.

Ingredients
  • 1 cup old fashioned oats
  • 1 cup buttermilk
  • 1 egg lightly beaten
  • 1/2 cup firmly packed light brown sugar
  • 5 tablespoon unsalted butter, melted and cooled
  • 1 cup flour
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 cup cranberries (fresh, frozen or dry does not matter)

Directions
  1. Combine oats and buttermilk, let stand for one hour
  2. Preheat oven to 400 degrees
  3. Add egg, butter, sugar to the oat mix and stir until just combined
  4. Sift flour, salt, baking soda and powder, add to oat mix, stir until just moist
  5. Fold cranberries in
  6. Bake for 17 minutes
  7. mmmmm.....
