How to make it

  • Preheat oven to 350 degrees.
  • Combine mushrooms, tomatoes, sliced peppers, and zucchini in a baking dish.
  • Drizzle vegetables with olive oil and vinegar.
  • Sprinkle with about 1/8-1/4 tsp. of salt and 1/4 tsp. pepper (or more if you like pepper).
  • Place chicken into veggies and coat each side with mixture. Drizzle chicken with honey and season with herbs (poultry) and more salt and pepper.
  • Bake for 40-45 minutes.
  • Nice Alongside: mushroom or plain cous-cous; potatoes; or pilaf <3
