How to make it

  • Mix gently together the grated potatoes, onion and zucchini.
  • Add the eggs and the flour. Mix gently together until well coated. Using a large spoon, drop the potato mixture into small pancakes in the hot oil.
  • Fry the potatoes until browned on one side, turn and cook on the other side until potatoes are well cooked, browned and crispy about 7 to 10 minutes. Serve with homemade sour cream. Yummy!
