Classic Grilled Chicken Recipe
CLASSIC GRILLED CHICKEN This recipe came from an estate sale. I obtained it when I purchased the family collection from the Roark Estate in Grand Prairie, Texas in 1984.

Ingredients
  • 3-1/2 pound whole chicken quartered
  • 1/4 cup lemon juice
  • 1/4 cup olive oil
  • 2 tablespoons soy sauce
  • 2 cloves garlic minced
  • 1/2 teaspoon sugar
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon ground black pepper

Directions
  1. Rinse chicken under cold running water then pat dry with paper towels.
  2. Arrange chicken in rectangular glass baking dish.
  3. Combine remaining ingredients in small bowl then pour half of the mixture over chicken.
  4. Cover and refrigerate at least 1 hour or overnight.
  5. Cover and reserve remaining mixture in refrigerator to use for basting.
  6. Remove chicken from marinade then discard marinade.
  7. Pour hot water in foil drip pan and place under grill grid.
  8. Place chicken on grid directly above drip pan.
  9. Grill chicken skin side down on covered grill for 25 minutes then baste with reserved marinade.
  10. Turn chicken then baste again and grill 25 minutes.
