A cheap and quick recipe that fills you up and leaves the kids satisfied. Goes well with any kind of vegetable, I always use green or yellow beans. My husband loves it after a day working in the woods.

Ingredients
  • 2.5-2.75 pounds of lean ground beef
  • 28-ounce can of pureed tomatoes
  • 1/2 onion chopped fine
  • 2 cloves garlic crushed
  • 1 tsp. celery seed
  • half tsp. chili powder, or to taste
  • salt and pepper to taste
  • 2 cups grated carrot
  • 2 eggs
  • oil to fry meatballs in
  • 1.5 cups of long grain rice
  • rosemary, oregano to taste
  • sprinkling of sugar

Directions
  1. 1. Add to the lean ground beef 2 eggs, 2 cups of grated carrot, 2 cloves of crushed garlic, 1/2 onion chopped fine, and celery seed.
  2. 2. Mix these ingredients together well. Use your hands if possible, with gloves, to really get all the ingredients well blended.
  3. 3. Form 2 inch diameter(approx.) meatballs and add them to the heated oil in the fry pan. Brown them.
  4. 4. Add the tomatoes to the meatballs. Sprinkle rosemary and/or oregano to taste.
  5. 5. Sprinkle a small amount of sugar if desired, depends on your taste. Also add a small bit of chili powder to taste.
  6. 6. Cover and simmer for 45 minutes. Meanwhile make your rice (you could make mashed potatoes or pasta, whatever you like) as directed.
  7. 7. Serve and enjoy. Yum!
