How to make it

  • 1. Add to the lean ground beef 2 eggs, 2 cups of grated carrot, 2 cloves of crushed garlic, 1/2 onion chopped fine, and celery seed.
  • 2. Mix these ingredients together well. Use your hands if possible, with gloves, to really get all the ingredients well blended.
  • 3. Form 2 inch diameter(approx.) meatballs and add them to the heated oil in the fry pan. Brown them.
  • 4. Add the tomatoes to the meatballs. Sprinkle rosemary and/or oregano to taste.
  • 5. Sprinkle a small amount of sugar if desired, depends on your taste. Also add a small bit of chili powder to taste.
  • 6. Cover and simmer for 45 minutes. Meanwhile make your rice (you could make mashed potatoes or pasta, whatever you like) as directed.
  • 7. Serve and enjoy. Yum!
