How to make it

  • Melt butter in saucepan over low heat. Blend in flour and seasonings. Cook over low heat, stirring until mixture is smooth and bubbly. Remove from heat. Stir in milk. Heat to boiling, stirring constantly. Boil and stir 1 minute. Reserve 3 egg yolks and put through sieve. Gently stir in ham and eggs; heat thoroughly. Pour into toast cups and sprinkle with reserved egg yolks.
  • Toast Cups: Melt butter in a saucepan. Cut crust off bread and spread, with a pastry brush, the butter over all the bread. Put the bread into a muffin pan. Bake at 300 degrees for 5 minutes or until brown.
