Ingredients
  • 3 Large Game Ducks
  • 3 Stalks Celery,cut into pieces
  • 1 Onion,cut in pieces
  • 1-1/2 teaspoons Salt
  • 1/4 teaspoon Fresh Ground Black Pepper
  • 4 Stalks of Celery,cut in pieces
  • 4 Green Onions,cut in pieces
  • 1 Sweet Green Pepper,chopped
  • 2 Tablespoons Lemon Juice
  • 1 Tablespoons Worcestershire Sauce
  • 1/4 teaspoon Hot Sauce
  • 3/4 teaspoons Salt
  • 1/2 Cup Mayonnaise

Directions
  1. Combine first 5 ingredients in a large stock pot.
  2. Cover,bring to a boil,reduce heat and simmer about 1 hour or until ducks are tender.
  3. Remove ducks from stock,cool,remove meat from bones.
  4. Grind meat ,celery,green onion,and green pepper,in food proccessor,stir in remaining ingredients.
  5. Spoon into a 1 quart mold.
  6. Chill overnight.
  7. Unmold and serve with whole wheat Wafers
