How to make it

  • Combine first 5 ingredients in a large stock pot.
  • Cover,bring to a boil,reduce heat and simmer about 1 hour or until ducks are tender.
  • Remove ducks from stock,cool,remove meat from bones.
  • Grind meat ,celery,green onion,and green pepper,in food proccessor,stir in remaining ingredients.
  • Spoon into a 1 quart mold.
  • Chill overnight.
  • Remove form mold and serve with whole wheat wafers
